Spelt contains gluten but is a less used and less mass produced grain than wheat. 
Some people seem to therefore handle spelt better than wheat.
But because it does contain gluten it is no option for others who suffer from glutenintolerance or celiac disease.

An alternative for whole wheat is rice flour but make sure to also use a bit of a binding agent such as xanthan gum.
Sice riceflour is glutenfree it doesn&#039;t stick that well and can become extremely dry and crumbly. 
A gum / starch will do the job!
